Pink Elephant Kitchen opens in Carson City at former Lily’s China Bistro, specializes in organic Thai food
A new Thai restaurant, Pink Elephant Kitchen, held its grand opening mid January at the former Lily’s China Bistro location at 1280 S. Carson Street in Carson City.
According to their menu, Pink Elephant Kitchen offers Thai staples such as curries, rice plates and noodle plates, made from scratch in a home-like environment.
Their popular items include Pad Thai, Yellow Curry, Khao Soi (a rice noodle, homemade curry soup) and more.
Owner Birdie Harthano has been in the food industry since she was in high school, when she used to work farmers and flea markets in California.
Now, she has spent her adult life managing restaurants, mainly in Japanese and Thai cuisine.
Harthano moved to Carson City five years ago to be closer to family, and said she immediately fell in love with the city.
Creating Pink Elephant was born out of Harthano’s love of organic, clean, preservative-free food.
“I’m not a chef, but I love eating good food,” said Harthano. “But it’s hard to enjoy eating out when you know what is in the food.”
Pink Elephant serves up food made only from scratch, using organic ingredients whenever possible, without the use of MSG or preservatives.
In addition to serving food in the restaurant, Pink Elephant also serves frozen to-go curries for use at home, all made from scratch, without dairy, gluten or soy.
“We also do not use peanuts at Pink Elephant, so everyone can enjoy our food,” said Harthano. Any recipe that traditionally uses peanuts is substituted with almonds.
All of the curries can be made vegan or gluten-free as well, which Harthano says is difficult in many Thai food places since many curries traditionally use shrimp paste.
Pink Elephant Kitchen is open Monday through Friday from 11 a.m. to 5:30 p.m.
