Nashville Social Club is amplifying their signature strengths as Carson City’s premier dinner-and-world class live-music destination, while unveiling an elevated culinary direction led by Executive Chef Paul Scandura, newly relocated from California’s wine country.
This refresh blends Southern-inspired hospitality with refined culinary technique, honoring the venue’s nearly four-year heritage while introducing seasonal sophistication and chef-driven creativity to every plate.
“This evolution is about deepening the roots of what makes us special: scratch-made food, world class live music, popular banquet facilities and a warm vibe that welcomes community to celebrate life,” said John Procaccini, long-time music industry veteran and co-owner, with wife Kitty McKay. “With passion, intention and a disciplined approach, Chef Paul consistently raises the level of our entire kitchen.”
Elevated Southern Cuisine
Under Scandura’s leadership, Nashville Social Club is reimagining Southern classics with thoughtful sourcing, scratch cooking and refined presentation. The updated menu features seasonal ingredients, balanced flavors and elevated execution while maintaining the comfort and familiarity of guest favorites.
New weekly specials will complement the core menu, offering rotating chef features designed to give guests something new to discover throughout the week.
“Rather than recreate an entire menu,” Scandura said. “My goal is to elevate the dishes people have grown to love. I want you to experience a quality meal week after week, day after day. Everything we serve should feel special and consistent, every time.”
A Chef Shaped by Tradition and Exploration
For Scandura, food has always meant connection. At age nine, he decided he wanted to become a chef after growing up in a large family where meals were the centerpiece of daily life.
“I was surrounded by a large family, and regardless of the occasion, we grew up around food,” Scandura said. “Every night, we gathered around the table and reminisced about prior meals while eating dinner.”
His grandparents emigrated from Sicily and Genoa, Italy, settling in Lower Manhattan amid multicultural markets that influenced his early culinary exposure. His grandmother’s cooking expanded his curiosity beyond Italian cuisine and sparked a lifelong fascination with flavor.
At 15, Scandura began working at Fretta Brothers Pork Store, one of the earliest Italian delis established in the United States, built on a 300-year family tradition of hand-crafted meats. There, he learned butchering, curing techniques and the artful use of spices.
His passion later led him across 26 countries studying spice markets before formal training at the Culinary Institute of America in Hyde Park, N.Y. He continued his education in St. Helena at the Rudd Center for Professional Wine Studies, earning his sommelier certification and deepening his expertise in pairing food and wine.
Today, he brings his global perspective to Carson City, focusing on excellence, consistency, and ingredient quality. “This begins by sourcing the best ingredients I can and giving the crew better things to work with,” Scandura said. “I tell them to cook every day as though they’re cooking for themselves or their family.”
